Fiorentina Pizza

I am a big PizzaExpress fan and when mum came home with pizza supplies, I had a eureka moment!  While pretty much every single thing on their menu is to die for (especially the garlic dough balls), the one thing that I always look forward to is their Fiorentina pizza.  The decision was made that we would attempt to make our own and here is the list of things we used and how we did it!

You will need –

Just-Rol thin crust pizza bases & tomato sauce

1 large onion

A few handfuls of spinach

Cheese

Black olives

2 large eggs

Roll out the pizza base on a baking tray and slather the tomato sauce equally over each base

Chop up the onions but keep them fairly chunky

Heat up some olive oil in a saucepan and cook the onions for 3-4 minutes

Add a load of spinach into the pan with the onions, anyone who’s ever cooked spinach before will know how much it shrinks so you’ll need more than you think!

Stir the spinach and onions together and then drain out any excess liquid to stop your pizza base from going soggy

Sprinkle cheese on top of the tomato sauce and add anything else that you might want

Then spread the spinach and onion mix equally over each base and leave a space in the middle for the egg to stop it from leaking out when you break it on top.  Also pop as many black olives as you want on it.

Crack the egg in the space in the middle and then put the pizzas in the oven at 180 degrees for about 15 minutes or until the base looks golden and the eggs are cooked.
