There are going to be quite a few foodie blog posts in the near future, I’m stuck in the house with assignments to write and revision to be done. I have no human contact and that’s probably for the best until I can get all of this university work done! To make myself feel better, I’ve been cooking and baking and what better way to start things off than with a light and creamy chicken and white cheese lasagne. Perfect for spring comfort eating!
You will need –
1/2 cup of butter
1 clove of garlic
1/2 cup of all-purpose flour
1 tsp of salt
1 can of chicken broth
1 and 1/2 cups of milk
4 cups of mozzarella cheese
1 cup of Parmesan cheese
1 tsp dried basil
1 tsp oregano
1/2 tsp ground pepper
2 cups of ricotta cheese
2 chicken breasts
1 bag of spinach
First thing’s first, pop your chicken breast on a baking tray and cook at the top of the oven for about 20 minutes at 180 degrees or until no longer pink.
Chop up your onion and garlic.
Melt your butter on a low heat, stirring continuously.
Bung in your onions and garlic and let them sizzle for a couple of minutes or until they are soft.
Now stir in the flour and the salt and let it simmer until it bubbles.
Add the chicken broth and the milk and bring it to the boil stirring constantly for 1 minute.
Chop up your mozzarella, it doesn’t matter how small you do it as it’ll melt into the mixture anyway. Add the mozzarella and 1/2 a cup of the Parmesan to the mixture and once it has melted in, take it off the hob and set it on the side.
Your chicken should be ready by now so don’t forget to take it out of the oven and check that it’s cooked through!
Add the basil, oregano and ground black pepper.
Spread 1/3 of the mixture into a baking dish.
Make an even layer of lasagne sheets on top.
Chop up the chicken. Now I just need to point out at this point that I’ve been an absolute moron and deleted the next few photos so you will have to take my word for it and trust me that it will turn out perfect!
Layer the chicken and the ricotta cheese on top.
Put another layer of lasagne sheets on top as well as 1/4 of the cheesy mixture.
Pop your bag of spinach in the microwave for about 1 minute (don’t forget to pierce the bag!) and once it’s cooled down, layer it on top with some more of the Parmesan.
Pour the rest of the mixture on top and sprinkle any Parmesan that you have left on top too, also sprinkle some fresh parsley if you have some!
