15 Minute Mushroom Stroganoff

Autumn is upon us even though the weather doesn’t seem to think so and I am always on the lookout for quick and easy recipes which will fill me up and be a fantastic comfort food on a cold dark evening.  This mushroom stroganoff recipe is so easy to make and it can be on the table (or in your mouth) in 15 minutes!

You will need –

1 tbsp oil

1 medium onion, diced

4 cloves garlic, minced

500g mushrooms, sliced or diced

50ml vegetable stock

1tsp smoked paprika

Black pepper

3tbsp sour cream

4tbsp fresh parsley, chopped (I didn’t have enough parsley so used mixed herbs instead)

P1020071To start with, heat the oil in a large frying pan, and chuck in the onion, garlic and mushrooms over a medium heat for 5-10 minutes, until slightly softened.

Add the vegetable stock and smoked paprika, and season well with black pepper (and a little salt if you used low sodium stock). Cook for a further 5 minutes.

P1020074Just before serving, stir in the sour cream and half of the parsley, and once heated through, serve topped with the remaining parsley.  I served mine with plain rice but it would be great alongside a wild rice mixture.  That’s it!  I told you it was super easy!

  1. I absolutely love mushroom stroganoff but my boyfriend hates it. I think for a non-veggie some steak peices would be nice through it as an alternative.
